Bones of growing people so so from the epiphyseal plates...or "growth plates"...these are cartilagenous areas that produce cells that are eventually turned into cancellous bone (hard bone). Even when our growth plates fuse, however, our bones are made of many cells that are continually being turned over by osteoblasts and osteoclasts which form and destroy old bone, respectively. They do this in response to different forces the bones receive. Shear forces that occur from use of the muscles increases trabacular bone (spongy bone...the "inner" bone), which compressive forces (that occur from walking, being upright) increase cortical bone (the outer layer of bone)
